Don't Panic Monday!


It's the beginning of the week...Monday. :( We all dread  Monday's because our weekend was not long enough. To get through the week, I prep meals on Sunday so I don't have to panic on Monday, what's for dinner for the week. 

What does your meal plan look like? Do you have one? It is easy to do. Here is the sheet I use. 


You will notice the Wake Up on the first row. That is a drink I make up. It is 8 oz of water, some fresh minced ginger and a lemon slice squeezed. I mix with a spoon and drink up. Becareful when doing the Ginger. If you add to much, it will be strong and hard to get down (atleast for me). I make 2 qts worth on Sunday so I have it for the week.

Filling out the spreadsheet and having a plan will help you stay on track and get you to your goal. Track your Protein, Carbs and Fat daily. I use myfitnesspal, which makes everything easy.

For the meals, especially dinner, I will theme them. Italian, Chinese, Greek, American, Breakfast etc... This gives me some room that if I did not buy ground beef but have chicken cutlets, I can change up the dinner. On Sunday, I usually prep back up dinners by using the Wildtree Freezer Meal Workshops. I also prep Italian Sauce, stews and soup(s), depending what I have planned for the week.  
I will be honest, it was hard getting started. Once you get in the routine, its easy. We do have a cheat night out. It does float when we are busy with sports. Usually we do it Friday. Now that baseball and soccer has started, it could be a Monday or Thursday. Don't Panic. You can change meals if you need or want to. Recipe Wednesday

I'm so excited to try out this recipe!! I am not a HUGE fish eater. My dad LOVES eating Salmon. Since today is Recipe Wednesday, I am going to make Salmon Burgers for him and I. The rest of my family will get regular burgers. I do eat salmon with a Mango Salsa, but since my family does not fish, the only time I eat fish is when I go out with my girl friends or with my dad. Checkout this recipe! If you try it, let me know how you like it. If you do not have Wildtree Lemon Pepper Blend, you can use Fresh Lemon and Pepper or another Lemon Pepper Blend.

No Taco Tuesday! :(

Things have gone a little crazy since my last post. My schedule is completely crazy!!! Thank goodness for my Freezer Meals I prepped. They are helping my family,my parents and grandparents. My grandmother, who is 90 and has been a HUGE part of my life, has been diagnosed with Bladder Cancer. This came out of nowwhere, as she has been healthy and hasn't complained of any pain or present the symptoms associated with Bladder Cancer. She must of known as she asked me to return a book. The title was What Foods You Should Eat. I found that ironic as her and my grandfather have fallen to the quick and easy foods, not the healthier options. They are in their 90s, so they did do something right all these years.

I did not make Taco's tonight. It was more of Garlic and Herb Stuffed Chicken Breasts with Crunchy Bread Crumbs. Both are Wildtree products. My kids liked it, which makes me happy. I am slowly introducing them to NEW healthier foods. I am slowly replacing the staples in our house. Don't get me wrong, we still go out to eat and there is a night of Mc Donalds in our schedule with Competitive Soccer and Baseball season starting.

Tomorrow, will be my recipe Wednesday. :)

First Day of School


Today is the First Day of School for my kids and they are so nervous and excited, they could not get to sleep last night. Had an amazing day yesterday prepping Freezer Meal at the Workshop. We did the Family Favorites Kit. Everything looks amazing. We did the Tuscany Spaghetti and Meatballs last night. Everything was amazing! The BEST Meatballs EVER! The flavor of the meatballs was in every bite. We cooked it in the oven and it tasted so much better than pan frying like I was taught as a kid and watched my mom do. For the sauce, I used a can of tomato puree (20 oz), tomato sauce (15oz_ and tomato paste (6oz-sizes vary, but if it is over its ok) and put it in my big sauce pan. I use water to clean the cans out and add to the sauce. I added Garlic Galore seasoning and Tuscany Bread Herb Dipper to the sauce and 4 fresh basil leaves from my garden and 2 packets of Sugar in the raw to decrease the acidity. If you want the sauce thicker, do not use water to clean the cans out.

 Easy clean up and dinner was done in less than 30 minutes. That is what we LOVE about Wildtree. All the meals we have made is not a lengthy prep time and dinner is done in less than 30 minutes to enjoy time with the family or kids have more time to play.

The carbs are high on this meal, but you can change it out and not use spaghetti if you do not want to and make veggie spaghetti. (I am going to do that next time).

Vacation is over!

I was on vacation with my family at Great Wolf Lodge in Concord, NC. I was impressed that they had Organic Ketchup. There was a bottle on every table. How often when you go to a restaurant do they have Organic options? Where I live, not many. It is great to see someone caring about the food we put in our bodies.


Another great thing I noticed, was on the bottom their menu. 


100% NON-GMO!! This is important as we should care about the food we eat. Yes! I do go off the grid and not use 100% Organic, but GMO and Gluten Free is something I try to stick with. We need more places to care and help those with IBD, Colitis, Crohns and Gluten Intolerance be able to eat out. Sorry if I missed any other GI Issues as they are all important and limit where we can eat. This is on of the reasons I chose Wildtree. They understand how hard it it to eat out and prepping dinner should be easy, not complicated.
