Enchilada Update

Sorry it is taking me so long to post the picture. I have been busy packing, had 2 expos and getting ready for our Family vacation, which is where I am typing this from. The enchiladas were a hit. I think the next time I will use the sauce in with Taco Meat instead of on top of the tortillas and use the Taco sauce for the top.
